Ovo pečenje izuzetno je lako pripremiti, a kada je gotovo, izgleda zaista odlično i dostojno bilo kojeg razvikanog kuhara. Meso je najbolje staviti marinirati večer prije. Koristila sam javorov sirup jer on daje malo posebnu aromu i odličan je za omekšavanje mesa, ali jednako tako možete koristiti običan med. Korica limuna pomiješana u krušne mrvice dodatni je mediteranski štih. Mozzarella je tu jer se lijepo otopi i vrlo je neutralna, pa nema bojazni da punjenje bude preslano, s obzirom da su masline sasvim dovoljno slane.

1. Za marinadu pomiješati sve sastojke u većoj plastičnoj vrećici sa zatvaračem. Meso dodati, vrećicu zatvoriti i protresti kako bi svaki file bio sa svih strana jednakomjerno obložen marinadom. Marinirati 3 - 4 sata ili preko noći.

2. Svaki file izvaditi iz vrećice s marinadom i oštrim nožem razrezati po dužini tako da se otvara kao knjiga (paziti da se sasvim ne prereže). Meso istući batom za meso i stanjiti na najviše 1cm debljine.

3. Krušne mrvice, koricu limuna i bademe pomiješati i posipati po mesu. Sjeckane crne masline ravnomjerno rasporediti po mrvicama i posipati ribanom mozzarellom.

4. Svaki file saviti u čvrstu rolu, zatvoriti metalnim ili drvenim čačkalicama. Preliti preostalom marinadom i peči na 180°C oko 30 minuta. Izvaditi iz pećnice, ostaviti da odstoje oko 10 minuta, zatim izvaditi drvene ili metalne čačkalice i rezati na komade željene debljine.
