900 g pork ribs
3 tbs wine vinegar
1½ tbs soy sauce
1½ tbs honey
1½ tbs sherry
2 tbs vegetable oil
1 tsp lemon juice
5 cm cube root ginger peeled and finely chopped
1 ½ cup tomato puree
½ tsp ground star anise
4 cloves garlic, finely chopped
Sea salt, coarse and fine, pepper
1. Place ribs in large pan, cover with water and add wine vinegar and some coarse sea salt. Bring the water to boil, simmer for 15 minutes and drain.
2. Meanwhile, mix all remaining ingredients in a roasting pan, add ribs and coat well with the sauce.
3. Cook in the oven at 180˚C for 30 minutes, basting with its own juices after 15 minutes.
4. Increase heat to 210˚C and bake the ribs for additional 20 minutes or until rich and succulent.
Once cooked, take them out, cover and let them stand for 5 minutes before serving.
